The BEST on the go bars (NO BAKE)

I have tried SO MANY RECIPES in search of the perfect, on the go Bar. It is so easy to go to the store and find bars specifically created for dietary and taste preferences. I find not only do most of them fall short for me, but they have a lot of additives I would rather not feed myself and my family. I have finally come up with a recipe that checks all of the boxes, using ingredients I always have on hand. Enjoy!

NO BAKE SNACK BARS:

1 cup Packed Soft Dates (pitted)

2 3/4 cup Gluten Free Rolled Oats

1/4 cup Almond or Cashew Butter

4 tbsp Maple Syrup

1 tbsp Vanilla Extract

1/2 tsp Salt

3/4 cup Cacao Nibs

METHOD:

Add the oats to the bowl of a food processor and pulse until they are close to oat flour consistency.

Add all the remaining ingredients to the bowl except the cacao nibs.

Pulse until the mixture comes together, and gets sticky

Remove the blade, and fold in the cacao nibs.

Line a 9x5 inch loaf pan with parchment paper. Spread the mixture out evenly and press down with your hands to flatten. Place in the freezer for 30 minutes to set.

Once set, remove from the freezer, and cut into bars the size that you like. I like to store these in the freezer in a tightly sealed container. These will be good for 3-4 weeks in the freezer.
